Technology
QR Menu
A digital restaurant menu accessed by scanning a QR (Quick Response) code with a smartphone camera. The QR code links to a web-based menu that customers can browse on their device, eliminating the need for physical printed menus.
Digital Menu
An electronic version of a restaurant menu, typically accessible via QR code, web link, or app. Digital menus can be updated in real time, support multiple languages, and display photos, calories, and allergen information.
Contactless Dining
A dining experience that minimizes physical contact between staff and guests. Popularized during COVID-19, it includes QR menus, mobile ordering, and digital payment — practices that have become permanent in Gulf restaurants.
POS Integration
The connection between a restaurant's digital menu system and its Point of Sale (POS) system. Integration allows menu changes to sync automatically between the POS and the customer-facing digital menu.
Compliance
Calorie Display
The practice of showing the calorie content of each menu item. Mandatory in the UAE (chains with 5+ branches), Saudi Arabia (3+ branches), and progressively required across other GCC countries.
SFDA
The Saudi Food and Drug Authority, the regulatory body responsible for food safety standards in Saudi Arabia, including calorie display, labeling, and halal certification requirements for restaurants.
Allergen Labeling
The practice of identifying and marking the presence of common allergens (gluten, nuts, dairy, shellfish, etc.) on restaurant menus. Following Codex Alimentarius standards, 14 major allergens should be disclosed.
VAT-Inclusive Pricing
Displaying menu prices that include the applicable Value Added Tax. Required in UAE (5%), Saudi Arabia (15%), Bahrain (10%), and Oman (5%). Kuwait, Qatar, Lebanon, Jordan, and Egypt have different tax treatments.
Halal Certification
Official certification that food preparation and ingredients comply with Islamic dietary laws. In Saudi Arabia, all food must be halal by default. In other MENA countries, halal certification is standard but the process varies.
Dubai Municipality
The government authority responsible for food safety regulation in Dubai, UAE. Enforces calorie display, Arabic-language menus, hygiene standards, and food labeling requirements for all food establishments in the emirate.
ZATCA
The Zakat, Tax and Customs Authority of Saudi Arabia. Responsible for VAT enforcement, including the requirement that restaurant menus display prices inclusive of 15% VAT.
Food Safety
The handling, preparation, and storage of food in ways that prevent foodborne illness. In the restaurant context, food safety includes proper temperature control, cross-contamination prevention, allergen management, and hygiene standards.
Mashrou3i
Kuwait's initiative to formalize and regulate home-based food businesses. The program allows Kuwaiti citizens to legally operate food businesses from home with proper licensing and oversight from the Ministry of Commerce.
Bayan Platform
SFDA's digital platform for licensing home-based food businesses in Saudi Arabia. Part of the Kingdom's efforts to regulate the growing home kitchen sector under Vision 2030.
FTA
The Federal Tax Authority of the UAE, responsible for administering and enforcing the 5% VAT. Restaurants must display VAT-inclusive prices and their Tax Registration Number (TRN) on menus.
Design
Bilingual Menu
A restaurant menu presented in two languages, typically Arabic and English in the GCC context. Arabic is the legally mandated primary language in most MENA countries.
RTL Layout
Right-to-left layout, the text direction used for Arabic, Hebrew, and other Semitic languages. Properly supporting RTL layout means mirroring the entire page structure, not just translating text.
Arabic-First Design
A design approach that treats Arabic as the primary language, building layouts from right-to-left first and adding English as secondary content. This is the opposite of the common approach of designing in English and translating afterward.
Menu Photography
Professional food photography specifically designed for use in restaurant menus. High-quality menu photos can increase sales by 30% compared to text-only menus, according to hospitality research.
Business
Cloud Kitchen
A food preparation facility that operates without a dine-in area, serving customers exclusively through delivery platforms, WhatsApp ordering, or pickup. Also called ghost kitchens or dark kitchens.
Ghost Kitchen
Another term for cloud kitchen. A commercial cooking facility with no customer-facing area, designed exclusively for delivery and takeaway orders.
Home Kitchen Business
A food business operated from a residential kitchen, licensed through programs like Mashrou3i (Kuwait) or Bayan (Saudi Arabia). Home kitchens typically sell through WhatsApp and Instagram, making digital menus essential for professional presentation.
Operations
Menu Management
The process of creating, updating, organizing, and maintaining a restaurant's menu. Includes pricing updates, item additions/removals, seasonal rotations, and compliance management.
Menu Engineering
The strategic design and organization of a menu to maximize profitability. Involves analyzing item popularity and profit margins, then placing high-margin items in prominent positions.
Delivery Menu
A menu specifically designed or adapted for food delivery platforms (Talabat, Deliveroo, Careem, etc.). Often a subset of the dine-in menu, optimized for items that travel well.
Menu Categories
The organizational sections of a restaurant menu (appetizers, mains, desserts, beverages, etc.). Well-structured categories help customers navigate the menu efficiently and support menu engineering strategies.
Seasonal Menu
A menu or menu section that changes based on seasonal ingredient availability, holidays, or events. In the GCC context, Ramadan menus are the most significant seasonal rotation.
Ramadan Menu
A special menu designed for the holy month of Ramadan, typically featuring iftar (sunset breaking of fast) set menus and suhoor (pre-dawn meal) options. GCC restaurants commonly offer prix fixe iftar deals.
WhatsApp Ordering
The practice of taking restaurant orders through WhatsApp messages. Extremely common in the Gulf, especially for cloud kitchens and home-based food businesses. A digital menu link shared via WhatsApp streamlines this process.
Food Truck Menu
A compact, focused menu designed for food truck operations. Typically 10-25 items, optimized for fast service and changing event locations. QR menus are ideal for food trucks with limited counter space.
